Step 1: add the honey, lemon juice, and grated ginger into the sauce pan and place it on medium high heat. Using a wire whisk, stir the mixture as it starts to heat up and come to a boil.

When it starts to foam on the sides of the sauce pan, remove it from the heat and whisk until less foamy and return it to the stove.

Step 2: continue to whisk as the mixture boils and repeat the first step when it starts to foam. Now after a few minutes, check the temp using the candy thermometer and when it reads 300, your cough drops are done. Cut off the heat and let it cool.

Step 3: carefully pour the mixture into plastic molds and let them sit on your kitchen counter until they become hard like candy.

In a deep wide bowl, mix the powdered stevia and vitamin C, and transfer the cough drops into the mixture. Coat them using your fingertips and transfer the drops into an airtight mason jar.
