This cleansing detox soup recipe does not contain carbs like regular soups which makes it easy on the stomach. The softened vegetables are easy to digest. However, you can add in some plant protein to make it more filling. I sometimes add a handful of precooked chickpeas, tofu, or lentils as a protein source.
Ingredients for 4 servings | Prep & cook time: 30 minutes
- 1 cup of purple cabbage (chopped)
- 2 cups of kale (shredded)
- 1 small head of broccoli (divided into florets)
- 3 medium carrots (sliced into rounds)
- 4 celery stalks (chopped)
- 3 garlic cloves (minced)
- 1 onion (chopped)
- 1 cup of cherry tomatoes (cut into halves)
- 1 inch of ginger root (minced)
- 4 cups of vegetable broth (low-sodium)
- 2 cups of water
- 1 tablespoon of olive oil
- 1 teaspoon of ground turmeric
- a dash of cinnamon
- a dash of cayenne pepper
- a dash of black pepper
- a dash of salt (optional)
- 1 lemon juice (freshly squeezed)
How To Make Vegetable Detox Soup
In a large soup pot over medium-high heat, heat the olive oil and saute the onions for 5 minutes or until slightly translucent. Add in the garlic and ginger, and saute until fragrant.
Add in the carrots, celery, cabbage, and broccoli, stir fry for 3 minutes, and mix in the broth, water, cover and increase the heat.
Let the soup boil for 10 to 15 minutes until the vegetables are softened. Add in the kale, tomatoes, turmeric, cinnamon, cayenne pepper, black pepper, and salt.
Lower the heat and let the soup simmer covered for an extra 10 minutes or until the kale is cooked through. Serve with fresh lemon juice.
